Chicken Bacon Ranch Loaded Fries – Street Food Style
Here’s another top seller from my food truck! My daughter’s friends still talk about Clyde’s C.B.R. Fries—short for Chicken, Bacon, Ranch fries. They might even make a comeback on the menu this summer.
I had to pull them off the truck a few years ago when chicken prices skyrocketed, and the food cost made them impossible to serve. Thankfully, those prices finally settled back down. Because honestly? These loaded fries deserve their spot on my menu.

If you’re craving street food for dinner, this recipe will make the whole family happy. It’s an easy recipe and completely customizable. I made these with fresh, from-scratch French fries, but you can absolutely use frozen fries if that’s what you have on hand. It’s also a great way to use leftover chicken—or grab a deli chicken or pre-cooked chicken to make it even faster.
Loaded fries were one of the very first items I added to my food truck menu, and for good reason. I’m a sucker for crispy fries smothered in melty cheese, savory meats, and a bold, flavorful sauce.
Over the years, those loaded fries turned into loaded tater tots… and then even loaded mac and cheese. I mean, if you run a food truck, you need something “loaded.”
Loaded means piled high, messy in the best way, and dripping with flavor. And people love that.

Why You’ll Love These Chicken Bacon Ranch Loaded Fries
There are a few reasons you need these fries in your life. They’re crispy, cheesy, loaded with bacon, and drizzled with creamy ranch. Nothing beats that chicken, bacon, ranch combination—especially when it’s piled high on golden fries.
These loaded fries bring serious street food flavor home without the cost of eating out. You can make an entire sheet pan for dinner, game night, or a sleepover—just like I’ve done more than once. My kids’ friends always know when something good is coming out of my kitchen.

There’s just something about hot fries topped with juicy chicken, smoky bacon, melty cheese, and ranch that satisfies every craving at once.
Ingredients You’ll Need
There are a few simple ingredients needed to make these crispy fries smothered with cheesy goodness.

- Chicken- Cooked and seasoned (Shredded or diced)
- Bacon-Cooked & chopped (Good quality bacon bits work also)
- Cheese Sauce- (Now this matters! See my notes for what I recommend)
- Potatoes or Frozen French Fries (Russets or Idaho for fresh fries or a good brand of frozen fries)
- Ranch– (your favorite brand!)
- Peanut Oil or Vegetable Oil (for deep frying)
How to Make Chicken Bacon Ranch Loaded Fries
Don’t overthink these fries! I broke it down into some easy-to-follow steps.
Starting with Raw Chicken? If you’re using raw chicken breast, dice and saute. If you’re using a whole chicken, simply cook it in the crockpot the day before or Instant Pot for a few hours, cool, and debone, shred, and season. Keep warm in the oven or pan until ready to use.

Making your own Bacon bits? You can either bake the bacon in the oven, it’s cleaner that way! Or chop the bacon and fry it up on the stovetop. Drain on paper towels and set aside.
Making homemade French fries? Start with russets or Idaho (white) potatoes. I get my russets from the local potato growers in my area; they grow them specifically for French fries, potato chips, and tater tots. So their russets produce a nice crispy French fry! Simply slice into fries, thinner the better, and try to keep them all uniform. I leave the peelings on for fries. Heat the oil to 350-365* and fry until crispy and golden brown. Toss in salt or your preferred seasoning salt.
Cheese sauce– Now I am picky about my cheese sauce; you cannot find a good substitute in the grocery store. I purchase mine from our local food distributor; it’s a slightly spicy cheese sauce. But grocery store nacho cheese sauce is all you can get, doctor it up with some seasoning while you are warming it. Add about 1/2 tsp. garlic powder & Onion powder, and 1/4 tsp. Cayenne pepper for some spice.
Ranch- I have made homemade ranch before when I have fresh herbs available from the garden, and it’s the bomb! But when I don’t, I use whatever ranch I have on hand.
Green Onions-I garnish with green onions; they add a bit more flavor and some greenery, making the fries just look all cute. Totally optional or replace with some smoked Paprika or parsley.

To assemble these loaded fries
- Place your crispy, seasoned French fries on a sheet pan or plate.
- Pour hot cheese sauce over the fries
- Top with your warm seasoned chicken
- Add chopped bacon
- Drizzle with Ranch and garnish with green onions (optional)
- Grab a Fork and ENJOY!
Cooking Methods: Deep Fry, Oven, Air Fryer, or Griddle
I’m a firm believer in crispy food, and in my opinion, nothing replaces deep frying. It creates the crispiest crust on breaded items and those perfectly golden French fries that hold up beautifully under all those toppings.
But I also know not everyone has a fryer at home. If you’re nervous about pan-frying on the stovetop or just want an easier method, you can absolutely make these fries in the oven, air fryer, or even on a Blackstone griddle.
Here’s how:
Deep Fry (Best for Maximum Crispiness)
- Heat oil to 350–375°F.
- Fry fresh-cut potatoes(or frozen fries) in batches until golden and crisp.
- Drain on paper towels and season immediately.
This method gives you that true street food texture.

Oven Method
- Toss fries with oil and spread in a single layer on a sheet pan.
- Bake at 425°F until golden and crispy, flipping halfway through.
The oven method is easy and works great for feeding a crowd.
Air Fryer Method
- Lightly coat fries with oil.
- Cook at 375–400°F, shaking halfway through.
This method is quicker and uses less oil while still giving you good crispiness.
Griddle Method
- Preheat your Blackstone or flat-top griddle.
- Add oil and spread fries or diced raw potatoes in a single layer.
- Cook, flipping occasionally, until browned and crispy.
- Top right on the griddle, use shredded cheese.
This gives you rustic loaded potatoes and works especially well for reheating leftover french fries on those hot evenings.

Variations and Substitutions
You can easily customize these chicken bacon ranch fries.
- Replace the cheese sauce with your favorite melty shredded cheese (such as cheddar, montery jack, provolone, or mozzarella), and use the oven or broiler to melt on top of the fries.
- Use turkey bacon in place of the pork bacon
- Use leftover cooked chicken
- Turn into loaded tots
- Turn into Buffalo Chicken bacon fries- toss the chicken in buffalo sauce, top with blue cheese dressing.
- Replace the chicken with shredded turkey or leftover shredded pork roast
- The flavor options are limitless! BBQ, garlic, parmesan….
Make-Ahead Tips
If you’re making for a large crowd or want to meal prep for a busy weekend, here are some steps to help you.

Prep
- Cut the potatoes, cover with water, and add a Tablespoon of salt. Cover and store in the fridge for up to 3 days. When you’re ready to fry, simply drain and pat dry before frying.
- Cook and chop the bacon, store in the fridge until ready (homemade bacon bits last for 2-3 weeks)
- Cook, season, shred, or dice chicken. Cool and store in the fridge or freezer until ready. Fridge 4-5 days, freezer 3 months.
- Slice green onions can be done 2-3 days before, store in the fridge.
I am a major fan of meal prep, with my ADHD brain, having my meals planned out and prepped has been a lifesaver when I get home from my full-time job. So I try to help others learn how to prep, also!

Street Food Flavor Without Leaving Home

If deep frying, keep the oil between 350–375°F for the crispiest texture. • Use leftover chicken:
Rotisserie, grilled, or deli chicken works perfectly in this recipe. • Cheese tip:
Shredded cheddar, Colby Jack, or a cheese sauce all work well. Melt under the broiler for best results. • Assemble just before serving:
Fries are best topped and served immediately to keep them crispy. • Make it spicy:
Add buffalo sauce, jalapeños, or swap ranch for chipotle mayo.
