Clyde is his name and making good food is his game. My family and I worked hard to convert this old bread truck into a fully mobile kitchen. You can read all about the entire process and see photos of Clyde’s transformation in the Blog section. Clyde is a fully mobile and certified kitchen. We have a deep fryer, flat top griddle, char broiler, freezer, prep cooler, hand washing, and dishwashing sinks on board, plus an amazing Ansul system, in case I start a fire!. When building Clyde I wanted to have the freedom to create any kind of food and we have accomplished that.
Summer 2022 will be my 2nd season running Clyde, I had a great summer in 2021, thanks to all my amazing supporters and family members for helping when I needed it.

Loaded French Fries.
Straight from the North Dakota Red River Valley.
C.B.R Fries- chicken + bacon + ranch + nacho cheese + chives (depending upon chicken prices)
P.B.R. Fries-pickles + bacon +ranch +dill cheese curds ( from a local N.D dairy)
Poutine - Special, ran at certain events.
NEW! Birria Fries- birria beef, cheese sauce, pickled red onions, salsa, Clyde’s sauce.
Street Tacos
Vampire Taco- 2 per order. Carnitas (pork) + crispy cheese +salsa + pickled red onions +thinly sliced cabbage + Clyde’s sauce. (flour shell, corn upon request) (Most popular taco!!)
NEW! Queso Birria Tacos- 3 per order. Tender stewed beef & melted cheese served in a fried corn tortilla. Side of consommé (rich tomato sauce, similar to salsa) for dipping.
NEW! Walleye Tacos- 2 per order. Crispy fried walleye, Clyde’s sauce, shredded cabbage, salsa, served on flour tortillas. Subject to change due to availability.
Smash Burgers
All locally sourced beef. From cattle in the Devils Lake region.

Basic Cheeseburger- 2 smash patties. Cheese, sauce and a toasted bun.
NEW! The Stockyard- 1-smash patty, smoked brisket, cheese, coleslaw, crispy onion straws, BBQ sauce & Clyde’s sauce.
Smoked Brisket Sandwiches will be offered as a special until we run out.
Hot Dogs
All hotdogs are split and warmed on the griddle. Served on a toasted bun.
Prairie Dog- Hot Dog wrapped in dough and deep fried.

Deep-Fried Apple Pie Rolls- 2 per order. Fresh apple pie filling, fried and rolled in cinnamon sugar and served w/ caramel sauce.
N.D Beignets (rustic donuts) -deep-fried sweet dough, dusted with powdered sugar and drizzled with chocolate syrup, caramel, or Strawberry.
Deep Fried Cheesecake- 2 per order. Vanilla cheesecake center & crispy outside. Rolled in Cinnamon sugar. Sauces- Caramel or strawberry drizzled on top.
